These crispy crunchy sugar crusted honey cinnamon almonds should come with a warning they are seriously addictive, you simply can’t stop at one.
They are great as a snack, on a platter or perfect to dress up in a jar and give as a gift.
Roasted Honey Cinnamon Almonds
Crispy sugar coated honey almonds
Ingredients
- 50 gm Butter
- 80 gm Honey
- 1 tsp Salt
- 1 1/2 tsp Vanilla extract
- 1 tsp Cinnamon
- 500 gm Raw Almonds – Skin on
- 120 gm Raw sugar
- 1/2 tsp Salt – extra
Instructions
- Preheat oven 160C
- In a large pan add butter, honey, salt, vanilla, cinnamon, stir until melted or in the Thermomix 2 Mins/Varoma/Sp1
- Add the almonds and stir to coat or in Thermomix 30 Sec/reverse/Sp1
- Spread almonds over lined oven trays and roast in the oven for 20 minutes or so stirring every 5 minutes, you know when they are ready when the honey mixture bubbles and becomes sticky like caramel.
- In a large container with a lid put in the sugar and the extra salt, shake to mix add the almonds shaking well to coat the almonds in sugar.
- Spread the sugar coated almonds on to fresh lined oven trays to cool completely.
- Once cold break the almonds apart and store in airtight containers or jars.
