Ingredients Method

Ingredients

  

• 4 Chicken Thighs
• 1 Onion finely diced
• 2 Stalks Celery finely diced
• 1 Tbsp Olive Oil
• 1 tsp Garlic or 1 clove crushed
• 1 Lt Chicken Stock
• 2 Cups Water
• 1 Cup Risoni
• 1 Lemon, Rind grated and juiced
• 1/4 Cup Parsley Chopped
• Pinch Black pepper
• Pinch White Pepper

Method

 

1. In a large Saucepan fry the onion, celery and garlic in olive oil until softened.
   
2. Add Stock and water with the chicken thighs and pepper.
   
3. Simmer 20 minutes.
4. Remove chicken and shred with 2 forks and set aside.
5. Add risoni and cook for 6-8 minutes, stirring so the pasta dosen't stick to the bottom of the pan.
6. Return the chicken to the soup with the lemon rind, lemon juice and parsley, cook a couple of minutes then serve.
