Lemon Hedgehog

A tangy lemon flavoured version of the classic hedgehog.

The freshness of lemon in a no bake slice, it is a perfect addition to any morning or afternoon tea.

Lemon Hedgehog

Ingredients
  

  • 1 Pkt Marie biscuits
  • 1/2 Cup Biscuit crumbs
  • 1 Cup Coconut
  • 1 Lemon rind grated
  • 125 gm Butter melted
  • 1/2 Can Condensed Milk
  • 2 Cups Icing Sugar
  • 1 tsp Butter
  • 1-2 tsp Lemon Juice
  • Boiling water

Method
 

  1. Lin a slice tray with Glad Bake or Tin Foil
  2. In a large bowl break up biscuits into small pieces, I like to do this by hand to have more control over the size.
  3. Add biscuit crumbs, coconut and grated lemon rind to biscuits.
  4. Melt butter in a jug then stir in the condensed milk until smooth and well combined.
  5. Pour this mixture into the biscuit mixture and stir well.
  6. Press firmly into the lined slice tray then smooth with the back of a spoon
  7. In a bowl combine the icing sugar, butter, lemon juice and gradually add enough boiling water to make a smooth spreadable mix.
  8. Spread icing onto slice and sprinkle with a little extra coconut if you like.
  9. Put into the fridge to set for approximately 2 hours.
