Caramel Hedgehog slice

Caramel hedgehog is a delicious variation on the original chocolate hedgehog, making a caramel to mix through the broken biscuits, so easy and yummy to make, freeze it in portions for lunchboxes or an unexpected visitor.

A no bake slice that is ready to eat in 2 1/2 hours that is a firm favourite with all.

Ingredients
  

  • 1 Pkt Marie biscuits
  • 1/2 Cup Biscuit crumbs
  • 125 gm Butter, melted
  • 1/2 Can Condensed Milk
  • 1 Tbsp Golden Syrup
Topping
  • 200 gm Milk Chocolate
  • 1 tsp Vegetable Oil

Method
 

  1. Line a slice tray with baking paper.
  2. Break up biscuits into small pieces placing in a large bowl (I like to do this by hand)
  3. Combine butter, syrup and condensed milk in a saucepan, slowly bring to the boil cook a couple of minutes stirring constantly until a thick caramel. (or do this in microwave on high 1 minute, stir, then in further 30 second increments until thickened and caramel)
  4. Add caramel to biscuits and biscuit crumbs, mixing well.
  5. Press into the lined slice tray smoothing the top with the back of a spoon.
  6. Melt chocolate for topping (I do this in the microwave 1 minute on high then in 30 second bursts until melted, stirring well after each time in the microwave)
  7. Add oil to the chocolate and stir well, pour over slice and spread to cover.
  8. Refrigerate until set approximately 2 hours.
  9. Remove slice from fridge 30 minutes before cutting to stop the chocolate cracking.

Notes

Slice freezes well.
Great for morning/afternoon tea, lunchboxes etc.
A great variation to chocolate hedgehog.
