Fritters

Vegetable fritters are very versatile they can be main course, light lunch, side dish or anything you want them to be. Also the vegetable combination can be what ever you have in the fridge no need to fuss about a missing ingredient just use what you have.

Veggie fritters can be prepared at an earlier time and reheated later, they freeze well so putting a quick meal together is very easy.

They are a great addition to a BBQ and can be made prior and then just reheated on the BBQ.

Vegetable Fritters

Grated vegetable fritters, packed with flavour and goodness

Ingredients
  

  • 2 Carrots grated
  • 2 Zucchini grated
  • 150 gm Pumpkin grated
  • 1 Sweet potato grated
  • 1/2 Onion finely diced
  • 1/2 Capsicum finely diced
  • 1 Cup Corn
  • 1/2 Cup Plain flour
  • 1 tsp Cumin
  • Pinch Salt
  • Pinch Black pepper
  • 3 Eggs

Instructions
 

  • Add all grated vegetables to a large bowl with the diced vegetables, stir well
  • Add flour, cumin, salt and pepper, mix through the vegetables then add egg, mix well.
  • In a hot pan add vegetable oil and drop in heaped spoon full size portions of vegetable mixture, flatten slightly and cook for approximately 8 minutes per side or until browned
  • Serve with a green salad and sour cream or chilli sauce

Notes

There are so many ways to serve veggie fritters, in a burger, at breakfast with a poached egg on top, as a main/lunch with a fresh salad, at a Bbq, as finger food and the list goes on.
Don’t get too worried about not having a certain ingredient just substitute it for something else and just use this recipe as a guide.
