Zucchini Slice

Zucchini slice is an economical, easy, tasty dish that can be on the table in well under an hour with most of that time being baking in the oven.

It is a very versatile recipe, it can be served for breakfast, lunch, main course, as a snack, in a bread roll with salad as a burger or served in small squares as finger food or take it on a picnic just to name a few.

The mixture can be cooked in a variety of dishes, a quiche dish, a slice dish, mini muffin pans and a pie maker if you have one.

Zucchini Slice

Zucchini slice is a delicious, easy, tasty dish perfect served warm or cold.

Ingredients
  

  • 2 Medium zucchini grated
  • 1 Small onion finely diced
  • 3 Rashers bacon finely chopped
  • 1 Cup Self Raising flour
  • 1 Cup Grated Cheese
  • 1/2 Cup Olive oil
  • 5 Eggs
  • Pinch Salt
  • Pinch Black pepper

Instructions
 

  • Preheat Oven 190 C
  • Grease quiche dish or line a slice dish.
  • In a large bowl add zucchini, onion, bacon, cheese and flour, stir well.
  • Add eggs, oil, salt and pepper combine well.
  • Pour into quiche dish or slice tray.
  • Bake 30-40 minutes or until set and browned.

Notes

Vegetables can be substituted or added – diced capsicum, corn kernels, grated carrot, grated sweet potato, shredded spinach.
Bacon can be omitted for a vegetarian version.
Cook in mini muffin trays approximately 20 minutes
Cook in pie maker 6-8 minutes.
Freezes well.
I have made it using gluten free flour or ground rice with no difference to the end result.
