Anything that combines Chicken and Bacon in a creamy sauce is a winner in my book and this dish is super delicious and on high rotation at our house.
Creamy chicken and bacon is a great family meal but it also lends itself as a dinner party meal.
Creamy Chicken and Bacon
A delicious chicken dish with a creamy bacon sauce.
Ingredients
- 2 Tbsp Olive Oil
- 500 gm Chicken (Breast sliced, Thighs, Tenderloins)
- 3 Spring Onions sliced
- 4 Rashers Bacon sliced
- 300 ml Cream
- 1 Cup Chicken Stock
- 1 tsp Dijon Mustard
- 1/2 Cup Parmesan Cheese finely grated
- 1 Small Lemon, rind grated and juice
- 1/2 Cup Frozen Peas
- 1 Cup Baby Spinach
- 1/4 Cup Fresh Parsley chopped
- pinch Salt
- pinch Black Pepper
Instructions
- Heat oil over medium heat in a large fry pan, add chicken, cook until browned, set aside on a plate.
- Add spring onion, garlic and bacon to pan, cook stirring until crispy.
- Add the cream, stock, mustard and parmesan.
- Bring to the boil, reduce heat, simmer uncovered 10 minutes or until sauce is thickened.
- Add chicken back to the pan with peas, spinach, lemon juice and rind, parsley, salt and pepper, simmer a further 5-10 minutes or until chicken is cooked.
- Served with steamed vegetables and crusty bread.
Notes
This dish would also be lovely served with pasta; just shred the chicken with 2 forks.
