Potato and Leek Soup
This soup is quick and easy when you are short on time.
Ingredients
- 1 tbsp Olive Oil
- 1 Clove of Garlic or 1 tsp
- 1 Small Brown Onion chopped
- 2-3 Leeks washed and sliced
- 600 gm Potatoes peeled and quartered
- 1 Litre Vegetable or Chicken Stock
- 1 pinch Salt
- 1 pinch Black Pepper
Instructions
- In a large saucepan gently fry onion, garlic and leeks in olive oil until softened.
- Add potato, stock, salt and pepper bring to the boil and simmer for approximately 30 minutes or until potato is soft.
- Use a stick blender to puree until smooth and serve.
Notes
Tip:
I make my own stock paste in batches which is very economical using vegetables, herbs and salt, storing in jars in the fridge or freezing in ice block trays then adding it to water to make stock when needed.
