An easy no bake Passionfruit Slice, it is quick to make and just needs a couple of hours in the fridge to set, then your ready to cut and serve. Passionfruit slice is perfect as a snack, a morning or afternoon tea offering and as a bonus it freezes well so having a stash in the freezer deals with that last minute use.
Passionfruit slice uses basic pantry ingredients as well as fresh passionfruit, plain biscuits, coconut, butter, condensed milk and icing sugar. I adapted the recipe from the basic lemon slice so anyone familiar with that recipe will know how easy it is. I am lucky to have friends who share their beautiful home grown passionfruit with me, I will freeze the passionfruit whole then thaw and use as required.
I have tried making this slice with canned passionfruit but I feel it is too wet so I always opt for fresh passionfruit.
I make this slice in the Tupperware slice tray lining it with baking paper which makes it super easy to remove from the tray to cut. Depending on where I am serving the slice I cut it into any where from 12 to 40 pieces.
Passionfruit Slice
Ingredients
- 1 pkt 250 gm Marie Biscuits (Plain sweet biscuits)
- 1 Cup Coconut
- 125 gm Butter
- 1/2 Can Condensed Milk 190 gm
- 3 Passionfruit
- 2 Cups Icing sugar
- 50 gm Butter (extra)
Instructions
- Line a slice tray with baking paper.
- Crush the biscuits until a fine crumb.
- In a large bowl melt the butter, stir in the condensed milk and the flesh of 2 passionfruit, mix until combined.
- Stir in the biscuit crumbs and coconut, mix until well combined.
- Press into the lined slice tray until firmly packed and smooth on the top.
- In a small bowl stir the softened butter and the flesh of the remaining passionfruit with the icing sugar, gradually adding enough boiling water to make a thick icing.
- Spread icing over slice and refrigerate until set approximately 2 hours.
- Cut into desired size pieces and enjoy.
