I would be fairly certain most people are guilty of having a few sad vegetables leftover from the week before still stored in the crisper.
Don’t throw them out there are countless ways of using them up.
They can be turned into a delicious soup just make it as per my pumpkin soup recipe but replace the pumpkin with whatever vegetables you have got.

Roasting vegetables for salads and frittatas is another great way of using them up, chop vegetables into dice and toss in a little olive oil (I like to use a garlic or lemon infused variety for extra flavour) sprinkle with some salt, pepper your favourite herbs or spices and cook on a lined baking tray for approximately 30-45 mins at 180 C.
