A quick and easy pasta with a light lemon and spinach sauce.
It will take longer to boil the water to cook the pasta than to make the whole dish, it may be very simple but it is full of flavour and is equally good served as a main on its own or served as a side with chicken, pork or even fish.
Pasta with Lemon and Spinach
A light pasta dish with lemon flavours
Ingredients
- 500 gm Pasta – Fettucchini, Spaghetti, Penne
- 2 Tbsp Olive Oil
- 2 Tbsp Butter
- 4 Garlic Cloves crushed
- 2 Spring Onions chopped
- 1 Lemon, finely grated rind and juice
- 100 gm Baby spinach leaves
- 1/4 Cup Parsley, chopped
- Pinch Salt
- Pinch Black Pepper
Instructions
- Bring a large saucepan of water to the boil.
- Cook the pasta according to packet, fresh usually only takes 3-5 mins, dried 8-12 minutes.
- Heat oil in large fry pan, cook spring onion and garlic a couple of minutes.
- Add butter, lemon rind stir until butter melts.
- Add spinach, parsley, lemon juice and 1/2 cup pasta cooking water, cook until spinach wilts.
- Toss cooked pasta through sauce and serve.
Notes
This is an incredibly quick dish you could also add some chicken but it will take an extra 10 minutes or so.
It pairs very well with dishes as a side.
